Sweet Potato Hash
Serves 1 (4 oz. Portion)

1/2 cup Sweet Potato (medium, diced and blanched)
1 tbsp. Andouille (small diced)
1 tsp. Onion (carmelized)
1 tsp. Spiced Pecans
1 tbsp. Port Wine
1 tbsp. Clarified Butter
Salt & Pepper to taste

Méthode:
Pour clarified butter into sautè pan. Add all remaining ingredients (except for the port wine). Sautè for 3 minutes. pour port wine in pan and continue to sautè until port wine is evaporated.
